Method
Mix all ingredients together in a small bowl. Coat a Pyrex baking dish with the olive oil and place chicken in the dish turning each piece with a fork until coated with the oil. Rub each chicken breast with your mixed ingredients being sure to coat both sides. Cover and refrigerate chicken for 2 hours, turning occasionally.
To Grill:
Prepare barbecue (medium-high heat). Remove chicken from baking dish. To prevent sticking, add some olive oil to some cheesecloth and season your grill with the cheesecloth. Place breasts on grill at an angle and turn each breast 4 times diagonally for proper doneness. About 8 minutes.
Saffron Rice Pilaf
MethodMelt butter in heavy large saucepan over medium heat. Add peppers and onion. Sauté until soft, stirring often, about 5 minutes. Add rice; stir 1 minute. Mix in 3 cups broth, 3/4 teaspoon salt, and saffron. Bring to simmer. Reduce heat to low, cover, and cook until liquid is absorbed, about 18 minutes. Remove from heat; stir in 6 tablespoons grated cheese. Season with salt and pepper. (Pilaf can be made 30 minutes ahead. Keep covered. Rewarm over low heat, adding more broth by tablespoonfuls to moisten if necessary.) Stir 1 1/2 tablespoons chives into pilaf. Mound in serving bowl. Top with cheese shavings and remaining 1 1/2 tablespoons chives. |
Green Bean, Yellow Bean & Cherry Tomato Salad
Method
Cook all beans in large pot of boiling salted water until crisp-tender, about 5 minutes. Drain; rinse with cold water and drain well. Combine beans, tomatoes, onion and basil in serving bowl. Whisk oil, vinegar and sugar in small bowl to blend. Season dressing with salt and pepper. Add dressing to vegetables; toss to coat. Cover. Chill at least 1 hour and up to 4 hours, tossing occasionally. Serve salad cold or at room temperature. |
