Each month, we feature a wine and a celebrated guest Chef. This month, our guest chef isn’t a chef and far from famous, but after living and working in Italy for a year, she is one heck of a home cook and created a terrific recipe to pair with the Peju 2008 Sauvignon Blanc!

Farm to table is all the buzz in the USA, but the Italians have been practicing it as a way of life for centuries.  Rita grew up working on a farm and is an avid vegetable gardener, but it wasn’t until she grew an acre of organic vegetables for a local cooking school that the concept truly clicked for her.  We invite you to try this simple, light, tasty Tuscan Salad with Peju’s fresh and lively 2008 Sauvignon Blanc!

Tuscan Salad

Ingredients           Amount

Head of Romaine Lettuce
Ripe Bartlett Pear
Piece of Pecorino* cheese (approximately 2/3 the size of the pear)

Extra Virgin Olive Oil
Good Quality Balsamic Vinegar
Dried Oregano
Sea Salt

1/4 cup + 1 Tbsp
1/2 tsp

Method

1. Wash lettuce, dry, tear into bite sized pieces and place in a bowl. 
2. Cube pear and Pecorino into small ½ inch cubes and place on top of lettuce.
3. Sprinkle a pinch of sea salt and the dried oregano on the salad.
4. In a separate container add the Extra Virgin Olive Oil and Balsamic together and shake or stir vigorously.
5. Add dressing to salad, toss and serve.

Pairs beautifully with Peju 2008 Sauvignon Blanc!

Rita’s friends and family claim she likes to cook, but in reality she likes to eat!
Born and raised in Oregon, some of Rita’s earliest childhood memories, and many family photos, revolve around large family gatherings and tons of freshly mounded fruits and vegetables. Like her grandfather, mother and siblings, Rita is passionate about growing heirloom tomatoes and eating simple, ripe, flavorful food straight from the garden.

As a sales and marketing executive Rita has been privileged to travel the globe, but her favorite activity anywhere in the world, including many small towns and large cities across America, is to find the local farmers market, wander its stalls and soak in the richness of its bounty.
