Spanish-Style Sauteed Shrimp

Medium to large shrimp |
1 lb. |
Method
1. Shell, wash and devein the shrimp.
2. In a glass dish, mix half the garlic, chilies, chives, lemon zest, and all the salt, oil, and wine. Add the shrimp and marinate in the fridge for one to eight hours.
3. Heat a sauté pan or wok over high heat for a few minutes or until very hot. Strain oil/marinade mixture from shrimp into a separate container.
4. Heat 2 tablespoons of oil mixture almost to smoking in the pan. Once hot, add the rest of chiles and garlic and the shrimp.
5. Toss the shrimp in the pan until they just turn pink on all sides. This should take a few minutes, and varies depending on shrimp size.
6. Pour the contents of the pan into a bowl and toss with the remaining chives and lemon zest, plus the lemon juice.
Serve and enjoy!
