This Yucatecan-inspired roasted leg of lamb captures the warmth and complexity of the region’s flavors, creating a match made in heaven with our wine club-exclusive Zinfandel, “Lean In.” Slow-roasted to tender perfection in banana leaves and coated in an achiote marinade, this dish brings a smoky, citrusy depth that complements the wine’s bold notes. Topped with pickled red onions for a pop of acidity, it’s a perfect centerpiece to elevate your next meal with vibrant, layered tastes.
1 bone-in or boneless leg of lamb (6 – 8 pounds)
1 package of banana leaves (available in Mexican and Asian markets)
3 sliced fresh jalapeños (for garnish)
4 oz Achiote paste (available in Mexican markets)
¼ cup fresh lime juice
¼ cup fresh grapefruit juice
¼ cup chopped garlic
¼ cup champagne vinegar
1 tablespoon ground cumin
1 tablespoon Mexican dried oregano (available in Mexican markets)
1 tablespoon sugar
2 tablespoons sea salt
1 ½ Cups olive oil
1 large red onion, thinly sliced into half-moon shape
½ cup fresh lime juice
1 teaspoon sea salt
¼ teaspoon dried Mexican oregano
For the Achiote Adobo Marinade
Preheat oven to 275°F
In a large mixing bowl, whisk together marinade ingredients until achiote paste is fully dissolved, and mixture is well combined. Set aside.
Rub marinade generously over lamb leg, ensuring it’s completely coated on all sides. Cover and refrigerate for at least 6 hours or overnight to allow flavors to penetrate.
Line bottom of a roasting pan with washed banana leaves.
Place marinated lamb on banana leaf-lined roasting pan. Lightly sprinkle with sea salt.
Cover lamb with additional banana leaves and roast for 4 to 4 ½ hours, or until meat is tender.
Top roasted lamb with pickled red onions and sliced jalapeño chiles, if desired. Enjoy!
For the Pickled Red Onions
In a bowl, combine sliced red onion, lime juice, sea salt, and oregano.
Toss well to coat onions evenly. Let mixture macerate for at least 2 hours, or up to 1 day, to develop full flavor. Reserve until ready to serve.
