We’ve used a rich dark chocolate in our chocolate strawberries recipe to complement the rich pistachio flavor. These are perfect for Valentine’s Day celebrations, picnics in the park, or as a fun (and tasty!) activity to do with friends & family. Pair with PEJU Late Harvest Orange Muscat for an extra sweet treat.
1 cup dark chocolate (60 – 70% cacao), finely chopped
6 large strawberries, preferably long-stemmed
1/2 cup lightly salted pistachios (no shell), finely chopped
Any additional toppings you prefer!
Line a baking sheet with wax paper.
Bring a small saucepan of water to gentle simmer. Place chocolate in heatproof bowl (glass is preferred). Place chocolate bowl over (not in) the water (do not let water boil, or let the bowl touch the water).
Allow for chocolate to melt. Stir occasionally.
Carefully remove bowl from heat and let chocolate cool for 3 minutes.
Place chopped pistachios in small bowl.
Hold a strawberry by the stem and dip into chocolate, coating about two-thirds; allow excess chocolate excess to drip off.
Immediately dip strawberry into pistachios. Place strawberry on baking sheet.
Repeat for remaining strawberries. Refrigerate until chocolate is firm, about 10 minutes. Enjoy!
