2.5 lbs all-purpose flour (half a bag)

To start, combine the yeast, honey, club soda, and 2 cups of regular water in a small bowl. Whisk until the yeast dissolves, then let the mixture sit for 5 minutes at room temperature.
Next, in a medium mixing bowl, add the flour and the yeast mixture. Begin mixing at low speed using the dough hook attachment on your mixer. Gradually add the remaining ingredients and mix on low for about 5 minutes.
Once everything is combined, increase the mixer speed to medium and continue mixing until the dough becomes shiny and smooth.
Transfer the dough to a work surface and use a knife or dough cutter to divide it into 8-ounce portions. Lightly flour your work surface and roll each portion into a round ball.
If you’re storing the dough, flour the bottom of your storage container and freeze it for future use. If you’re making pizzas right away, cover the dough and let it rest for an hour at room temperature until it has risen and is easy to work with.
